Superbowl Eats: Caramelized Onion & Roasted Garlic Dip


Even though my team isn't playing this Sunday in the Superbowl, I'll still be watching.  For me the Superbowl is as much about the game as it is about the commercial, halftime and of course FOOD.  Living in Canada we don't get the awesome commercials, which I miss alot so I make up for it with lots of tasty eats.  One of my favorite creations and a perfect game time food, it this homemade onion dip.  It takes a bit more time to make than using the dry onion soup mix, but it is worth it.
Caramelized Onion & Roasted Garlic Dip

2 Vidalia Onions
1 bulb garlic
1 Tbsp butter
2 Tbsps olive oil
8 oz of cream cheese - room temperature
1 cup low fat sour cream
1/3 cup mayonnaise
1 Tbsp Worcestershire sauce
1 Tbsp lemon juice
1/4 tsp white pepper

1.  Preheat oven to 400F.  Cut off the top of the bulb of garlic to expose the individual cloves.  Wrap in aluminum foil and place in the oven.  Roast for 1 hour. Set aside to cool when done.
2.  While the garlic roasts, roughly chop the onions into small pieces.  Heat a large saute pan over medium low heat with the butter and oil.  Cook the onions over medium low heat for 45 minutes until caramelized.  Season with salt & pepper.  Remove from heat when done.
3.  In a large bowl, using a hand mixer beat the cream cheese until smooth.  Add in the sour cream and mayonnaise, Worcestershire, lemon juice and white pepper.  Squeeze the garlic out of the bulb on top of the cream cheese mixture and transfer the onion to it.  Try not to transfer any excess oil.  Fold in the garlic and onions until combine.  Refrigerate for a few hours to let the flavor combine.  Serve with potato chips.

I have a weakness for any kind of onion dip and chips and I swear this one goes above and beyond any other you've ever had.  Make it for the game or make it just because, I promise you'll be happy you did.
